This is truly my favorite lunch. I have been having it almost daily for months and never seem to tire of it. This is crunchy, creamy and juicy all rolled into one amazing coconut wrap.
Now, I have tried lots of different low carb keto friendly wraps and the brand I absolutely love is Sunfood. They have turmeric, raw organic coconut wraps with only four ingredients and just 4.5 grams of net carbs and 3 grams of dietary fiber.
If coconut isn’t your thing, I would give them a try anyway. The reason I say that, is because when guests come over, I serve these wraps like they are a delicacy. I have never had a guest or family member who didn’t come away loving them as well. Even those who hate coconut!
The longest part of making this wrap is cooking the bacon. What I prefer to do, is cook more than what is needed and refrigerate the unused portion for a later use.
However, when making this bacon avocado tomato wrap for several people, save yourself the time and frustration and have all of the bacon cooked ahead of time. This makes life easier when the bacon is already cooked and the wrap can be quickly put together.
Bacon Avocado Tomato Wrap
I use turkey bacon since I do not eat any pork. But if you prefer pork then try substituting it for the turkey bacon in this recipe. The turkey bacon is best cooked till browned and crispy but not burned or charred.
The avocado adds creaminess and a smooth rich texture not to mention it also has health benefits. It contains a lot of fiber, about 5 grams in just one half! It is the fiber that keeps you feeling full longer.
The avocado, also benefits the heart, with its healthy fats by lowering your bad cholesterol. Bone, skin and eye health can also be a result of adding avocados to your healthy lifestyle.
Tomatoes add an element of sweetness and depending on their variety juiciness as well. I especially love any of the beefsteak variety because they offer both a firm texture and meatiness along with being juicy. I think this is the perfect combination.

BACON AVOCADO TOMATO WRAP
A fiber rich quick and easy meal. Great on a hot summer day.
Ingredients
- 1 coconut wrap
- 2 slices uncured turkey bacon Applegate brand.
- 1/2 fresh avocado, pitted and sliced Do not slice through skin.
- 2-3 slices fresh tomato, preferably beefsteak variety
- Himalayan sea salt to taste This is the pink salt.
Instructions

Place one tumeric coconut wrap on a plate.

Melt small amount of coconut oil in frying pan. You should use enough to coat the bottom of pan.

When coconut oil is hot, add bacon slices and cover. Cook over medium low heat turning frequently until bacon is browned and crispy. Remove from pan and drain on paper towel.

While bacon is cooking, cut avocado lengthwise around the outside of fruit and separate into two. Remove and discard pit. Do not cut through pit.

Slice avocado flesh lengthwise without cutting through skin.

Cut two to three slices of the tomato. This will depend on how large your tomato is to begin with.

Add the bacon to the center of the coconut wrap. Next, scoop out the flesh of one half of the avocado and place on top of the bacon. Last add your tomato slices and season with Himalayan salt. Gently roll up.
