Not only do these cookies excel on great vanilla flavor but they also hold up well after baking which in the gluten free world is a big bonus.
They can easily be made ahead and frozen too, making your special occasion more enjoyable and less stressful.
HOMEMADE GLUTEN FREE VANILLA WAFERS
The ingredients are nothing short of the best for maintaining optimum health. And that is not all, these vanilla wafers will not interfere with high insulin levels or raise blood glucose levels.
That is because carbohydrates are kept very low and the sugar has been replaced by pure monk fruit powder. You will want to make sure that there are no other ingredients in it as often monk fruit is cut with another sweetener. This will not benefit you.
And did I mention that these gluten free vanilla wafers are keto friendly too?
HEALTHY INGREDIENTS
Coconut flour and almond flour offer plenty of fiber while pure monk fruit powder replaces refined sugar. The big vanilla punch comes from using both vanilla powder and vanilla extract. And the perfect texture shines through when both coconut oil and real butter are used.
Natural gums are used to replace gluten found in wheat flour. If you cannot tolerate corn then you will have no problem using guar gum. For those without a corn intolerance you can go ahead and add xanthan gum if you prefer. The amounts will be roughly one quarter teaspoon less when using xanthan gum.
CHOCOLATE OR CAROB COATING
To dress this cookie up, dip half of the cookie in chocolate or carob coating. Place on wax paper or parchment paper until the coating has hardened. Arrange on cookie tray or freeze for later use.

HOMEMADE GLUTEN FREE VANILLA WAFERS
These cookies are big on vanilla flavor while retaining a moist crumb. They will not raise blood glucose levels are low in carbohydrates and are keto friendly too!
Ingredients
- 1/2 c butter, unsalted and softened
- 2 T coconut oil
- 1 egg
- 2 T almond milk, unsweetened
- 1/2 t vanilla extract
- 1/2 c coconut flour
- 1 1/8 c almond flour
- 1/2 t baking powder
- 1/4 t Himalayan (pink) salt
- 3/4 t guar gum
- 1/4 t pure monk fruit powder
- 2 1/2 t vanilla powder
Instructions

In the large bowl of a stand mixer, cream softened butter and coconut oil.

Add egg, almond milk and vanilla extract. Continue mixing until combined.

In a medium bowl sift coconut flour and almond flour. Add baking powder, Himalayan salt, guar gum, monk fruit powder and vanilla powder. Stir to combine.

Add dry ingredients to the large bowl of wet ingredients and mix on low speed to full incorporate.

Preheat oven to 325F. Lone cookie sheet with parchment paper. Drop by teaspoonful onto baking sheet. Flatten tops slightly with back of spoon or fingertips.

Bake for 20 minutes. Remove from oven and cool on cookie sheet 5 minutes before moving to cooling rack to finish cooling. Makes 20 cookies.
CHOCOLATE OR CAROB COATING

3 T cocoa powder or carob powder

2T coconut oil

1/8t + 1/16t pure monk fruit powder

Melt coconut oil in small saucepan over low heat. Once melted add cocoa or carob powder and stir until a smooth and silky consistency is achieved.

Stir in monk fruit powder until dissolved.

Dip cookie into chocolate or carob sauce until half of cookie is coated. Let excess drip off and set on parchment lined baking sheet to set up.

To expedite the process, you can put chocolate or carob covered cookies in the refrigerator for 15 minutes.
