In this post, I want to share with you a great healthy snack recipe. It will quench your chocolate craving, stop your hunger pangs and work with the low carb keto type lifestyle.
Ever since losing thirty pounds in February 2017, I have been at the mercy of others. During this entire time, I have been buying well sourced yet expensive food items to support my new way of living.
It was time to make a few changes in my budget that would not affect the quality of what I was consuming. So, the search began to find an easy recipe that would be keto friendly.
After pouring over a lot of recipes and testing a fair number I found one at Favoursfood.com that I could work with. I kept a few of the same ingredients but did change most of them.
For example, I did not want chocolate in the finished product because chocolate reacts in my body just like a drug. It’s great going down but keeps you coming back for more. When you do not feed it, you experience a withdrawal headache lasting multiple days.
Carob is a nice caffeine free substitute that comes from the pod of the Carob tree native to the Mediterranean. It is naturally sweeter than cocoa powder, is high in fiber and has three times more calcium. Carob works well in this recipe.
I find the synthetic sweetener Swerve an ingredient in so many recipes I come across these days. And while it may not be Aspartame or Splenda it still is not something I want to be putting into my body.
I would rather find something which is naturally sweet without being altered. That is why I have chosen monk fruit powder which comes from the fruit of a tree grown in China.
Monk fruit is 300 times sweeter than sugar so minute amounts are all that is needed. And the wonderful part is monk fruit has no aftertaste like the natural sweetener Stevia is known for. For those watching blood glucose levels, monk fruit has a negligible effect.
So, go ahead and make up a batch of this rich yet healthy snack.

No Bake Brownie Bites Keto Style
Ingredients
- 1 c whole walnuts
- 1/8 t Himalayan salt (pink) or Celtic salt
- 1/4 c carob powder
- 1/2 c almond butter
- 5 pkts monk fruit in the raw
- 1 1/2 T coconut flour
- 1 1/2 T Hemp seed (Flax meal will also work)
- 1/8 c carob chips
- 1/8 c unsweetened shredded coconut (plus more for coating)
- 1/2 t pure vanilla extract
Instructions

In the bowl of a food processor add the walnuts and Himalayan salt. Process until walnuts are finely ground.
2) Add the carob powder, nut butter, monk fruit, vanilla, hemp seed and coconut flour. Process until well combined and batter begins coming together.
3) Depending on the thickness of your nut butter you may need to add coconut flour to help bind everything together. (I have never had a problem adding it in during step 2 above).
4) Pulse in the carob chips and unsweetened shredded coconut.
5) Line a freezer safe pan or baking sheet with parchment paper.
6) Roll the dough between the palms of your hand to form small balls. If desired roll in additional shredded coconut. Place on parchment paper.
7) Place the baking sheet or pan in the freezer for 20 minutes or until firm.
8) Store in a sealed Ziploc bag or container in the refrigerator or freezer.
*These brownie bites never freeze solid so I keep mine in the freezer for an easy any time snack.
Yeild: 15-20 balls at 1-1.5" each.
