Freeze mushrooms so that you never run out again. If you love mushrooms, this is an easy way to keep them on hand.
It is common for our family to buy a container of button mushrooms. Lately, we have been getting the pre-washed and sliced for the few pennies more. I know, I know it saves me time and sometimes you just have to do it.
But more often than not we always have a few that go unused but always with good intention.
Since I have learned the art of freezing mushrooms, I can now effortlessly flash freeze the ones that were left. Before you know it, all those small amounts that didn’t seem like so much have added up.
This can really come in handy the next time you have run out of fresh mushrooms.
THE ADVANTAGES OF KEEPING FROZEN MUSHROOMS
Freezing produce is a cost-effective strategy for extending its life. And, from a health perspective freezing also retains key nutrients.

HOW TO FREEZE MUSHROOMS
1 container of button mushrooms (free from spots and decay)
1/2t citric/ascorbic acid
3T water, room temperature
2 oz glass spray bottle
If mushrooms are pre-washed then there is no need to rewash them. Otherwise, gently brush any dirt and rinse in cold water.
Pat dry.
Dissolve citric acid in water. Pour into spray bottle. Set aside.
Slice mushrooms. Even the already sliced mushrooms can be sliced again so they aren’t so thick.
Line a cookie sheet with parchment paper.
Spray mushrooms with citric solution and place on parchment paper.
Freeze 2-4 hours.
Remove frozen mushrooms from cookie sheet and place in Ziploc freezer bag.
Seal, label and date before returning them to the freezer.
Note: Spraying with citric acid solution is optional however it does help retain their natural color. The mushrooms will be darker when you do not use it.
The mushrooms on the left have been treated with citric acid spray and the mushrooms on the right have not.
OPTIONS TO USE: This depends on how you plan to use the mushrooms
Take out desired number of mushrooms.
The mushrooms can be placed in a bowl and thawed before use.
Or you can place the frozen mushrooms in a fry pan over low heat. This will both thaw and warm.
Or you can melt a small amount of butter in fry pan and place mushrooms in melted butter to warm and gently cook.
Freezing mushrooms is a great way to keep a supply ready for all of your recipe needs.
